We all carry at least one unforgettable memory tied to a meal. Eating is never merely an act of nourishment — it’s a dialogue of senses, a shared emotion, a story passed down through taste. Yet over time, these memories can blur. Illness, emotional transitions, or the natural shifts of life may distance us from the foods that once brought us comfort.
Even today, there are those who recall the flavor of something they can no longer eat — a taste etched into the heart, lingering like a half-remembered dream.
We wanted to create a space where those blurred, emotional food memories could be gently reawakened — not as literal recreations, but as sensory interpretations shaped by intuition and care. Through this project, we hope to offer guests a meaningful and imaginative journey into the emotional landscape of food — where taste becomes memory, and memory becomes experience once again.
RE:PAST is an invitation to reconnect with the memories about your most memorable meal. It is a sensory journey that reimagines the act of dining — one that revives forgotten cravings, honors the intimacy of shared meals, and proposes a new food culture rooted in care, recollection, and quiet joy.
Through the collaborative curation of ROMANTIKA and Hye Soo Lee, RE:PAST explores how food can be a vessel for memory — retranslated and reinterpreted through intuitive storytelling.
Drawing from a collection of personal food memories shared by individuals, we translate these impressions into a refined multi-course dining experience. What results is not a direct recreation of the past, but a delicate evocation — an emotional echo made tangible through taste, texture, and design.

ABOUT ROMANTIKA X HYE SOO LEE
ROMANTIKA is an interdisciplinary creative duo composed of chef Victor Brandsson,
based in Copenhagen, Denmark, and visual designer Sung Yeon (Lily) Kim, based in Seoul,
South Korea. Our collaboration bridges culinary and visual arts to create immersive, multi-
sensory experiences where food, design, and emotion converge.
For this event, we are collaborating with Hye Soo Lee, a Seoul-based graphic designer
whose unique creative perspective has inspired the dining concept. Her work draws from
observation, memory, and symbolic meaning—expressed through graphic design, textiles,
and poetic visual storytelling. She creates worlds where the past lingers and the future offers quiet optimism.
ROMANTIKA curates experiences that go beyond traditional dining—each project is a
carefully designed environment where culinary expression and artistic direction are in
dialogue. Our work includes bespoke objects, collaborative events with artists, and narrative-rich dining encounters that celebrate instinct, culture, and connection.
